VEGAN SAAG PANEER (LÌCHŪN-ADAPTED) (Spleen, Stomach & Liver Guide)
Ingredients:
1 leek, sliced
(supports digestion, moves Qi)
1/4 tsp cumin, coriander and turmeric
(optional)
4 cups fresh spinach, chopped
(Liver blood nourishment)
1 block fava bean tofu or pumfu, optional 1 cup water (or vegetable broth)
1⁄2 tsp salt (or to taste)
Instructions:
Sauté the leek until soft, then add spinach and cook until wilted. Blend the mixture with a little water for a smooth consistency. Lightly brown the tofu, then combine with the spinach sauce and simmer. Serve warm for a grounding yet detox- friendly meal.
